Grilled Summer Veggies & Pesto

The weather in DC was perfect today and that inspired us to whip up a “summer friendly” dinner that we could enjoy on the back deck.

I quickly grilled some asparagus, tomatoes, crimini mushrooms, and shallots. Then I mixed those with artichoke hearts, pasta, and a fresh pesto we made earlier today for a perfect evening dinner.

Luckily there is plenty of leftover pesto so I am sure it’ll be making an appearance again later in the week (maybe as a base for pizza).
